Amaro is a liqueur that can be flavored with fruits, herbs, roots, nuts or flowers, or some combination thereof. Amari - the word means "bitter" in Italian - have been commercially produced since the 19th century in Italy, where they are traditionally consumed on their own before or after a meal. The best-known brand is Campari, one of the ingredients in the Negroni along with gin and red vermouth. The Negroni has come back into vogue in the U.S.in the last several years, which has made drinkers more comfortable with bitter flavors and inspired bartenders to seek them out, says Brad Parsons, the author of Amaro: The Spirited World of Bittersweet, Herbal Liqueurs, with Cocktails, Recipes, and Formulas.
