Matthew Kenney explains how he has created a culinary empire revolving around plant-based food. Kenney's plant-based restaurants include the highly-rated Arata, Double Zero and Plant Food + Wine. Kenney has written 11 plant-based cookbooks and in 2009 he founded the world's first classically structured raw food culinary academy. After graduating from the French Culinary Institute, he has gone on to be twice nominated as a Rising Star Chef by James Beard Foundation. Kenney has also been named one of America's Best New Chefs by Food and Wine Magazine.
