The popular dining brand is testing Cilantro-Lime Cauliflower Rice in select markets.
Beginning July 15, the new "rice" will be available at 55 Denver locations and throughout Wisconsin.
"To date, one out of three new menu item requests from Chipotle customers is for Cauliflower Rice," said Chris Brandt, Chipotle's Chief Marketing Officer. "We've answered the call from fans and created a better-for-you option that puts a delicious twist on our classic white rice recipe by using the same fresh cilantro and lime ingredients and culinary techniques."
The cauliflower rice will cost an additional $2.
Chipotle is leveraging clean-eating and low-carb diet trends with this new offering. According to the brand, the cauliflower rice is grain-free, compliant with Keto, Whole30, Paleo, vegan and vegetarian diets.
Cauliflower has grown in popularity in recent years, as it's seen as a healthier alternative to carbs. Stores like Trader Joe's have capitalized on the trend, with items like cauliflower pizza and cauliflower gnocchi.
According to Nielsen, sales of “cauliflower centric” refrigerated dishes rose 108% in 2018.
Chipotle has been a clear winner throughout the coronavirus pandemic as the fast-casual burrito builder quickly adapted its stores and layout to encourage social distancing and a safer experience. Chipotle stock is up around a percent in early trading Monday to $1,129.59 amid a broader market rally.
