Can't make it to Las Vegas? You can try the onion marmalade at home by combining onions and garlic in a saucepan with oil, cooking until translucent. Add wine vinegar and sugar and reduce until a glaze. Season with salt and pepper. Allow to cool and serve, topped with foie gras.
