Considering the Lobster? Here Are Ways to Love It

LAS VEGAS ( MainStreet) -- Shellfish lovers unite. June 15 is deemed "Lobster Day," and what better way to celebrate than with some of the most mouth-watering lobster dishes from hotels and resorts worldwide? From a lobster bisque with crispy lobster wontons to a lobster macaroni and cheese, TravelsinTaste has compiled a list of the best lobster dishes of the season. (Bibs not included.)

At rm seafood in Mandalay Bay, creator and executive chef Rick Moonen's massive tower shellfish sampler, "The Kitchen Sink," features two lobsters, 18 oysters, a dozen clams and a dozen shrimp, mussels, Dungeness crab and rm's escabeche. Andrew Zimmern and his crew feasted on several of the towers after shooting the 100th episode of Bizarre Foods in Las Vegas, part of the sixth season set to start airing in July. As he uncovered why Las Vegas is all about extremes, Zimmern visited the restaurant to explore seafood in the desert and celebrate Moonen's commitment to sustainability.
Those in Miami craving a taste of the tropics can try the Spicy Coconut Lobster at Andrew Carmellini's The Dutch.

Combining two traditional American favorites, Holsteins at The Cosmopolitan of Las Vegas offers its delectable Lobster Mac n' Cheese served in a creamy taleggio-mascarpone sauce. In this, the juicy Maine lobster is topped with a flavorful black truffle sauce. Another crowd favorite, the Maine Lobster Roll, includes fresh-cooked lobster tossed in a tasty chive aioli and served in a mini hot dog bun with cole slaw.

Elsewhere across the country, Fishtail by David Burke on New York's Upper East Side offers a three-course Lobster Louie menu every Sunday. Appetizers include a spicy lobster roll with avocado, soy pearls and pineapple, and a lobster scramble with tomato fondue and horseradish creme fraiche. Entrees are a celebration of lobster in all of its forms, such as his famous Angry Lobster, a grilled lobster with David Burke barbecue sauce, lobster poached in saffron butter, a lobster mac and cheese and lobster tempura.

Farther north in New England, enjoy breathtaking ocean views from Newport's coastline on The Chanler's outdoor patio restaurant, The Veranda. Dine on the signature lobster BLT designed by executive chef Thomas Duffy. Prepared with whole lobster, cherry-smoked bacon, fresh avocado, vine-ripened tomatoes, radish sprouts and topped with a mouthwatering creme fraiche, this is a dish to be reckoned with.

For a must-try appetizer, Jonathan Cartwright's lobster bisque from Muse at the Vanderbilt Grace in Newport, R.I., is pure savory delight for lobster lovers. Served with crispy lobster wontons and a creamy cognac creme fraiche, this bisque is a delicious kickstart to his Butter Poached Lobster entree, prepared with spring vegetable ragout and finished in a cognac coral sauce.

Grand Chef Relais & Chateaux Jonathan Cartwright's signature dish, steamed Maine lobster nestled on a bed of homemade fettuccine with carrots, ginger and snow peas in a savory cognac-coral butter sauce, is a customer favorite meant to be savored with the views of historic Kennebunk, Maine, from its White Barn Inn Restaurant. It's a modern spin on a traditional dish.

For those who love lobster so much that simply eating it isn't enough, Fairmont Battery Wharf offers the opportunity to experience the only lobster boat tour in Boston. Guests head out on a private excursion aboard an authentic lobster boat to learn how to bait, drop and haul in the traps. After a day at sea, guests return to the hotel's restaurant, Aragosta, where they can enjoy Butter Poached Lobster Flatbread with basil leaves and pecorino or have the chef prepare a lobster to their liking.

For those in sunny Miami craving a taste of the tropics, try the Spicy Coconut Lobster at Andrew Carmellini's The Dutch. It's a sweet and spicy dish -- chunks of lobster, nestled in a coconut. Delish!

If you prefer the West Coast flavor, Del Mar delivers with its famous lobster-prosciutto "bouillabaisse" with sweet shrimp, squid fennel, spinach served with grilled sourdough amid incredible ocean views and the beauty Del Mar Coastline.
