According to Dr. Nottingham, all carbohydrates are converted into sugar by the body and can lead to a blood sugar spike. This causes a release of insulin from the pancreas to bring sugar levels back to normal, but if we overeat carbs, the pancreas produces higher amounts of insulin to compensate. Dr. Nottingham, who was once more than 100 pounds overweight, cautions viewers to avoid the carbohydrate rollercoaster and examine food labels to avoid overeating carbohydrates. "Just because a food is low in sugar doesn't mean it's low in carbs," says Dr. Nottingham. Keeping total carbohydrates low can help keep blood sugar levels stable, avoid excess insulin production, and help from storing fat.
