According to Dr. Nottingham, all carbohydrates are converted into sugar by the body and can lead to a blood sugar spike.  This causes a release of insulin from the pancreas to bring sugar levels back to normal, but if we overeat carbs, the pancreas produces higher amounts of insulin to compensate.  Excess insulin can either drive the sugar into the cells where it can be burned as fuel or it can be stored as fat.
